Buying Iranian saffron for regional markets: Codex class, colour strength, authenticity and packing

Iranian saffron reaches regional markets under familiar commercial names and in several filament cuts, but a market name alone does not establish laboratory quality, authenticity or lot consistency. A professional buyer should translate the seller's vocabulary into a specification that can be repeated at pre-shipment sample, final delivery and reorder. Codex CXS 351-2022, amended in its current edition through 2026, and ISO 3632-1:2025 are useful anchors, but the contract should identify the applicable edition, test method and decision rule.

Define presentation and use first. Codex recognises filaments, cut filaments, powder and other distinctly different styles when properly labelled. Premium retail packing may place more weight on filament uniformity and visual presentation, while food formulation may prioritise colouring strength, aroma, dose efficiency and lot-to-lot repeatability. State the exact style, application, unit weight, destination and whether styles may be mixed. Powder needs a stronger authenticity-control plan because substitution or foreign material is harder to see.

Connect the Codex class to testable values. CXS 351-2022 provides Extra, I, II and III classes; unclassified saffron must at least satisfy class III requirements. In the current chemical table, maximum moisture is 12 percent for every class. Extra lists picrocrocin at a minimum of 80, safranal at 30 to 50 and crocin at a minimum of 230; class I lists 70, 20 to 50 and 200 respectively. Do not copy numbers without the method. Record parameter, unit, reference method, laboratory, uncertainty treatment, sampling time and retest rule together.

Separate appearance from authenticity. Long, vivid red filaments can be commercially attractive, but appearance alone does not prove identity. Codex prohibits adulteration and does not permit food additives in conforming product. Request the lot's cleaning and drying flow, foreign-material controls, segregation procedure, source records and authenticity evidence. Testing should follow the risk profile; a general supplier certificate or a result from another batch is not lot evidence.

Define plant-associated and foreign matter. Codex distinguishes extraneous matter associated with the source plant from foreign matter such as stones, metal or bag fibres. For Extra filament and cut-filament product, the table sets maximum values of 0.25 and 0.1 percent by weight respectively; class I allows 0.5 percent extraneous matter while retaining 0.1 percent foreign matter. The contract should state the sample mass, preparation and decision authority behind these values.

Tie sampling to the lot and documents. A hand-selected jar cannot represent several cartons. Define a lot through origin, production window, presentation, drying, pack and unique code. Write the number of units selected, selection pattern, composite-sample mass, splitting, seals and retained-reference storage. Sample, certificate of analysis, packing list, carton and invoice identifiers should align. Different harvest years or processors in one shipment should be evaluated as separate lots.

State harvest origin accurately. The current Codex text requires declaration of country of origin and treats it as the country of harvest for this standard; harvest region and year are optional declarations. If a quotation is sold as Iranian saffron, align the country of harvest, any claimed region, harvest year and packing operator across the evidence file. Regional or geographic claims should be traceable rather than implied by premium wording.

Design the pack for a sensitive, high-value spice. Light, moisture, heat, oxygen, odour pickup and mechanical damage can reduce sensory and commercial value. Specify food-contact material, light and moisture barrier, seal, headspace, net weight, stacking performance and storage condition for bulk and retail units. A premium pack should do more than look substantial: it should reveal tampering or leakage and preserve traceability from consumer unit to master carton. Validate the filled pack under route-relevant conditions.

Close the acceptance file before the final price. The RFQ should combine quantity, style, class, chemical and physical limits, test methods, sampling plan, authenticity evidence, harvest country and year, packing, delivery window and non-conformity process in one controlled revision. Allocate testing, retesting, inspection and rejection costs and prohibit unapproved lot or packaging substitutions.

Compare delivered value per usable gram. Equal-weight offers can differ in colouring power, aroma, uniformity, cleaning loss, pack performance and authenticity exposure. Normalise class, test results, actual net weight, control cost, packing, freight, tax and claim risk. For industrial use, the dose cost required to achieve a defined result may matter more than the nominal price per gram.

Professional Iranian saffron procurement turns a commercial name and red appearance into a testable file: presentation, class, sensory and colour strength, authenticity, lot, origin, packing and acceptance rules. That structure lets a regional buyer compare fairly, receive against shared evidence and repeat a successful purchase.
